Heat water

Bring 12 fl oz (about 355 ml) of fresh, filtered water to a temperature of 175°F to 185°F (80°C to 85°C). If you don't have a thermometer, bring to a simmer and let stand 1 minute to cool slightly.

Measure tea

Place 2 teaspoons of jasmine green tea leaves into a teapot, infuser, or tea mug with an infuser. If using a stronger brew or larger leaves, adjust to 2.5 tsp.

Steep

Pour the hot water over the tea leaves. Cover and steep for 2 to 3 minutes. Taste at 2 minutes; steep longer (up to 3 minutes) if you prefer a more pronounced flavor. Avoid steeping more than 3 minutes to prevent bitterness.

Strain

Remove the tea leaves by lifting out the infuser or straining the tea into a cup. Discard or compost the spent leaves.

Finish & serve

Optional sweetening: If desired, stir in 1 teaspoon honey or simple syrup while the tea is still warm so it dissolves easily. Adjust to taste.

Optional garnish: Add a slice of lemon or 2–3 fresh mint leaves for aroma and brightness. For a citrus note, squeeze the lemon slice lightly into the tea before dropping it in.

Serve: Pour the brewed jasmine green tea into a cup and enjoy warm. For iced jasmine green tea, allow the tea to cool to room temperature, then pour over a glass filled with ice and serve immediately.
