Chill the bottle or can of Hey Song Sarsaparilla beforehand so the drink is cold when served (recommended 1–2 hours in refrigerator).

Fill a highball or tall glass with about 1 cup of fresh ice cubes, or enough to come just below the rim.

Open the chilled Hey Song Sarsaparilla and pour 12 fl oz gently into the prepared glass over the ice to preserve carbonation.

If using, add 2 dashes of Angostura bitters on top of the drink to add aromatic depth. This is optional and traditional sarsaparilla can be served without bitters.

Garnish with a fresh mint sprig placed upright in the glass and a lime wedge on the rim. Lightly express the lime over the drink (squeeze once) if you prefer a hint of citrus.

Serve immediately with a straw or stirring spoon so the guest can adjust flavors. Note: keep the drink cold and consume while fizzy.
