Combine liquids and oats

In a medium saucepan, combine 1 cup water and 1 cup milk. Add 1 cup rolled oats and 1 tsp salt. Stir to distribute oats evenly.

Bring to a simmer

Place saucepan over medium-high heat and bring mixture to a gentle simmer, stirring occasionally to prevent sticking (about 3–4 minutes).

Cook until creamy

Reduce heat to medium-low and continue to cook, stirring frequently, until the oats are tender and the mixture is creamy, about 5–7 minutes. If mixture becomes too thick, add up to 2 tablespoons of additional milk or water and stir to reach desired consistency.

When the oats are nearly done, stir in 2 tablespoons brown sugar or maple syrup, 1 teaspoon vanilla extract, and 1 teaspoon ground cinnamon. Taste and adjust sweetness or cinnamon as desired. Cook for another 30–60 seconds to warm the additions and incorporate flavors.

Finish and serve

Remove saucepan from heat. Spoon hot oatmeal into bowls. Top each serving with 1 tablespoon butter and 2 tablespoons chopped nuts, and 1/2 cup fresh fruit (or arrange fruit as preferred). Drizzle with additional milk or cream (about 1–2 tablespoons) if desired. Serve immediately.

Variations

For creamier oats, substitute all milk for the liquid or stir in a splash of cream at the end. For a vegan version, use plant-based milk and a vegan butter or omit butter. To add protein, stir in 1–2 tablespoons nut butter or a scoop of protein powder after removing from heat.
