Hamburger patties
Prepare meat
Place the ground beef in a bowl. Sprinkle salt, black pepper, garlic powder and onion powder over the meat. Gently mix with your hands or a fork just until combined — do not overwork the meat to keep patties tender.
Form patties
Divide the meat into two equal portions (about 8 ounces each). Form each portion into a round patty about 3/4-inch thick and slightly wider than the bun or plate you’ll serve on. Make a shallow 1/2-inch dimple in the center of each patty with your thumb to help them cook evenly and prevent doming.
Preheat pan
Heat a heavy skillet or cast-iron pan over medium-high heat for 2–3 minutes until very hot. Add 1 tablespoon neutral oil and swirl to coat the pan.
Cook patties
Place patties in the hot pan, dimple side up, leaving space between them. Cook undisturbed for 3–4 minutes until a brown crust forms on the bottom. Flip and add 1 tablespoon butter to the pan. Cook the second side for 3–4 minutes for medium (adjust time 2–3 minutes per side for medium-rare or 5–6 minutes per side for well-done). If you want cheese, add it in the last minute and cover the pan to melt.

Crack the eggs into a small bowl (or keep separate if frying sunny-side up). Heat a nonstick skillet over medium-low heat and add 1 tablespoon butter. Allow butter to melt and foam but not brown.
Cook eggs
For sunny-side-up: gently slide eggs into the pan, keep heat low, cover with a lid for 1–2 minutes until whites are set but yolks still runny. For over-easy: cook until whites set, carefully flip and cook 15–20 seconds more. For scrambled: whisk eggs with the 1/2 teaspoon salt and 1/4 teaspoon pepper, pour into pan and cook gently, stirring until soft curds form.
