Tea base
Bring 600 ml water to a boil in a small saucepan or kettle.
Remove from heat and steep the 3 tsp black tea leaves (or 3 strong tea bags) in the hot water for 4–6 minutes, depending on desired strength. For milk tea, aim for the longer end for a robust flavor.
Strain leaves (or remove tea bags) and let the tea cool to warm (about 20–30 minutes). Refrigerate briefly if you want it cold sooner.
Brown sugar syrup & caramelized pearls (tapioca)
Make brown sugar syrup
In a small saucepan, combine 120 g dark brown sugar, 20 g granulated sugar, and 60 ml water. Heat over medium, stirring until sugar dissolves, then bring to a gentle simmer. Allow to simmer without stirring for 4–6 minutes until mixture thickens slightly and darkens into a glossy syrup. Remove from heat and set aside to cool slightly.
Cook tapioca pearls
Bring 800 ml water to a rolling boil in a medium pot. Add the 100 g uncooked tapioca pearls and stir gently immediately to prevent sticking. When pearls float, reduce to medium heat and simmer uncovered for 12–18 minutes (follow package timing for the brand), stirring occasionally so they don’t clump. Test a pearl for doneness — it should be translucent with a slightly chewy center.
Turn off heat and cover the pot. Let the pearls sit in the hot water for an additional 10–12 minutes to finish cooking and soften.
Drain the pearls in a fine mesh sieve and rinse briefly with warm water to remove excess starch.
Immediately transfer the drained hot pearls into the warm brown sugar syrup. Stir and let them soak for at least 5 minutes so they absorb syrup and become sweet and glossy. Keep pearls in syrup until assembling (they are best used within 1 hour; reheat briefly if they cool and harden).
Milk & finishing
Combine milk (400 ml) and optional heavy cream (60 ml) in a pitcher. Add 1 tsp salt and stir to combine. Taste and adjust — a small pinch of salt enhances sweetness.
If using chilled tea, measure 200 ml of cooled brewed tea and add to the milk mixture. If tea is still warm, cool it to room temperature first to avoid melting ice excessively.
Assemble each serving: divide the brown sugar-coated tapioca pearls between two tall glasses (about 50 g syrupy pearls per glass). Drizzle additional brown sugar syrup inside the glass for the signature streaked look (reserve syrup from the pearl soak).
Stir gently once to combine layers if desired, or leave layered for visual effect. Serve with a wide straw and enjoy immediately.
