Prepare beef and aromatics

Pat beef cubes dry with paper towels. Season lightly with 1/2 tsp salt. Slice onion into quarters, smash garlic cloves, and slice ginger into 1/8" rounds.

Brown beef

In a heavy Dutch oven or large pot over medium-high heat, warm 2 tbs vegetable oil until shimmering. Working in batches if necessary, sear beef cubes on all sides until deeply browned, about 3–4 minutes per side. Transfer browned beef to a plate and set aside.

Sauté aromatics

Reduce heat to medium. Add the quartered onion, smashed garlic, and sliced ginger to the pot. Cook, stirring, until aromatic and onion edges begin to brown, about 4–5 minutes.

Deglaze and combine flavors

Pour in 1 cup Shaoxing wine and scrape up brown bits from the bottom of the pot with a wooden spoon. Let the alcohol smell dissipate (1–2 minutes). Add 1 cup light soy sauce, 2 tbs dark soy sauce, 1 tbs rock sugar (or brown sugar), and 1 tbs light brown sugar; stir to dissolve.

Add liquids and spices

Return the browned beef to the pot. Add 6 cups beef stock and 2 cups water. Drop in 3 star anise, 1 cinnamon stick, 1 tsp Sichuan peppercorns, and 2 bay leaves. Bring to a gentle simmer over medium heat.

Braise

Once simmering, reduce heat to low, cover with the lid slightly ajar, and braise until the beef is fork-tender, 2 to 2.5 hours. Check every 30 minutes and skim any foam or excess fat from the surface. If the liquid drops too low, add a little hot water to maintain submergence of beef.

Adjust seasoning

After the beef is tender, taste the broth and adjust seasoning with remaining 1/2 tsp salt or more soy sauce if needed. Remove whole spices (star anise, cinnamon stick, bay leaves) and discard. Keep braised beef warm in the braising liquid until ready to assemble bowls.

Prepare noodles and vegetables

If using dried noodles, cook according to package directions until just al dente, then drain and rinse briefly under warm water. For fresh noodles, separate and blanch in boiling water for 1 minute to loosen, then drain. Bring a separate pot of water to a simmer and blanch bok choy for 30–45 seconds until just bright green; remove and set aside.

Strain and finish broth (optional clarity)

For a clearer broth, ladle the braising liquid through a fine-mesh strainer into a clean pot, pressing lightly on solids to extract flavor. Return strained broth to a gentle simmer. If you prefer the full-bodied braise, you may skip straining and heat the braising pot directly.

Assemble bowls

Divide cooked noodles between 4 deep bowls (~3 oz noodles per bowl). Top each with a portion of braised beef (about 8 oz beef total divided across bowls). Arrange blanched bok choy alongside the beef. Ladle 1 1/2 to 2 cups hot broth into each bowl to cover noodles and warm all components.

Finish and garnish

Drizzle a few drops of sesame oil and 1/2 tbs chili oil over each bowl if using. Scatter sliced scallion whites and greens, cilantro leaves, and sliced fresh chiles to taste. Grind white pepper over each bowl to taste. Serve immediately with extra chili oil and soy on the side.

Storage and reheating

Store braised beef and broth in separate airtight containers in the refrigerator for up to 4 days. Reheat gently on the stove until simmering and assemble as directed. Noodles are best cooked fresh; if stored, rinse and reheat briefly in boiling water before serving.
