Make dough
Combine 1 cup tapioca starch in a large bowl. In a small saucepan, bring 1 cup water, 3 tablespoons brown sugar, and 1 teaspoon dark brown sugar or molasses (if using) to a gentle boil, stirring until sugar dissolves. Remove from heat immediately. Make a well in the starch and gradually pour the hot sugar-water into the center, stirring with a spatula or chopstick until combined and cool enough to handle.
Knead and form pearls
When cool enough to touch but still warm, knead the mixture in the bowl or on a lightly starch-dusted surface until it becomes a smooth, pliable dough (about 3–5 minutes). If dough is crumbly, add up to 1 tablespoon warm water; if too sticky, add up to 1 tablespoon tapioca starch. Pinch off small pieces and roll between palms into small spheres about 8–10 mm (roughly the size of store-bought boba). Place finished pearls on a tray lightly dusted with tapioca starch to prevent sticking.
Rest pearls (optional)
Let the formed pearls rest 10–15 minutes so the surface dries slightly; this helps them hold shape during cooking. Do not let them dry out completely.
Cook pearls
Bring a large pot of water (about 6 cups) to a rolling boil. Add the pearls in small batches so they don’t stick. Stir gently after adding to prevent sticking. Boil uncovered: for fresh homemade pearls about 15–20 minutes until they float and reach a tender but slightly chewy center. After boiling, turn off heat, cover the pot, and let pearls sit in the hot water for an additional 10–15 minutes (depending on desired chewiness).
Rinse and sweeten
Drain pearls into a colander and rinse under cool running water briefly to remove surface starch and stop cooking. Transfer hot pearls into the prepared sugar syrup (see next section) and let them soak at least 10 minutes so they absorb sweetness and remain soft. Keep pearls submerged; if cooled and they begin to harden, reheat gently in simmering syrup for a minute before serving.
Sugar Syrup (for soaking and serving)
Combine 1 cup brown sugar and 1 cup water in a small saucepan. Bring to a simmer over medium heat, stirring until sugar dissolves. Let simmer 2–3 minutes to slightly thicken, then remove from heat and stir in 1 teaspoon vanilla if using. Keep syrup warm or at room temperature for soaking cooked pearls and sweetening drinks.
To Serve (optional, for bubble tea)
Scoop desired amount of sweetened boba (about 1/4 to 1/3 cup per serving) into a glass. Add 1 cup brewed black tea (cooled) and 1/2 cup milk or creamer for a single serving (scale as needed) over ice if desired. Stir to combine. Adjust sweetness with additional syrup to taste. Serve with a wide straw.
