Method

Tea

1

Bring water to a boil

Measure 12 oz (about 355 ml) of fresh cold water. Pour into a kettle or saucepan and heat until it reaches a strong rolling boil (for most black teas) — about 100°C / 212°F.

2

Preheat cup or teapot (optional)

Pour a little of the hot water into your teapot or cup, swirl to warm the vessel, then discard that water. This helps maintain brewing temperature.

3

Measure tea

Place 2 tsp of loose black tea leaves into an infuser or teapot, or use 1 standard tea bag if preferred. For stronger tea, increase to 1 extra teaspoon or a second tea bag.

4

Steep

Pour the boiling water over the tea leaves or tea bag. Cover the pot or cup and steep for 3 to 5 minutes depending on desired strength: 3–3.5 minutes for a lighter cup, 4–5 minutes for a full-bodied, robust cup. Avoid steeping longer than 5 minutes to prevent excessive bitterness.

5

Remove leaves

Once steeped, remove the infuser or tea bag promptly to stop extraction. If loose leaves were used without an infuser, strain the tea into another cup or teapot.

6

Sweeten and finish

Stir in 1 tsp granulated sugar while the tea is hot, adjusting to taste. If adding milk, pour in 2 tbsp (or to taste) and stir gently. Alternatively, serve with a lemon wedge instead of milk — squeeze to taste if desired (do not add lemon and milk together).

7

Serve

Serve immediately while hot. Use leftover tea within a few hours; refrigerate if storing for iced tea.
