In a large mash tun, combine the pale malt, flaked corn, and Carapils malt with 5 gallons of filtered water. Heat the mixture to 152°F (67°C) and hold for 60 minutes.

Mashing the Grains

After mashing, sparge the grains with hot water to collect the wort. Bring the wort to a boil, and add the Hallertau hops. Boil for 60 minutes, then add the Saaz hops in the last 15 minutes.

Boiling the Wort

Cool the wort quickly to around 50°F (10°C) using a wort chiller. Transfer to a fermentation vessel and pitch the Mexican lager yeast. Seal the vessel and ferment at 50°F (10°C) for about 2 weeks.

Cooling and Fermentation

After fermentation, bottle the beer with a priming sugar solution to carbonate. Let the bottles condition at room temperature for 1-2 weeks before refrigerating.
