Prepare Kimchi

Making the Kimchi

Chop the Napa cabbage into quarters, remove the core, and cut into bite-sized pieces. In a bowl, combine the cabbage, salt, and let it sit for 2 hours. Rinse and drain the cabbage. In a separate bowl, mix gochugaru, minced garlic, grated ginger, fish sauce, and chopped green onions. Combine this mixture with the cabbage and pack it tightly into a jar. Allow it to ferment at room temperature for 2-3 days before refrigerating.

Cooking the Potatoes

In a skillet, heat some oil over medium heat. Add the diced breakfast potatoes and cook until golden and tender, about 10-15 minutes, stirring occasionally. Season with salt and pepper to taste.

Cooking the Eggs

In a separate pan, cook the eggs to your liking (fried, scrambled, or poached). Season with a pinch of salt and pepper.

Assembling the Bowl

In a bowl, layer the fresh spinach, followed by the cooked breakfast potatoes, topped with the prepared kimchi, baby bocconcini, and the cooked eggs. Drizzle with sweet sesame aioli before serving.
