Prepare the Octopus

In a large pot, bring salted water to a boil. Add the octopus and cook for about 30-40 minutes until tender. Remove from water and let cool.

Prepare the Chorizo and Vegetables

Slice the chorizo sausage into thin rounds. Chop the scallions into small pieces. Halve the cherry tomatoes.

Grill the Octopus

Once the octopus has cooled, cut it into smaller manageable pieces. Brush with olive oil, season with salt and pepper, and grill on medium-high heat for about 3-5 minutes on each side until charred.

Cook the Chorizo

In a skillet, heat a tablespoon of olive oil over medium heat. Add the sliced chorizo and cook until crispy, about 5-7 minutes. Add the chopped scallions and cherry tomatoes, cooking until the tomatoes are just blistered.

Plate the Dish

Arrange the grilled octopus on a serving platter. Top with the chorizo, scallions, and cherry tomatoes. Drizzle with lemon juice and aged balsamic vinegar before serving.
