Making the Truffle Filling
Melt the Chocolate
In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler method) and stir until melted and smooth.
Add Cream and Vanilla
Remove the bowl from heat. In a separate saucepan, heat the heavy cream until just simmering, then pour it over the melted chocolate. Add the vanilla extract and stir until fully combined and smooth.
Chill the Mixture
Cover the bowl with plastic wrap and let it cool at room temperature for about 30 minutes, then refrigerate for at least 1 hour until set.
Forming and Coating the Truffles
Scoop and Roll
Once the mixture is set, use a melon baller or small spoon to scoop out portions of the chocolate mixture. Roll them quickly in your hands to form small balls.
Coat the Truffles
Roll the truffles in cocoa powder, chopped nuts, or shredded coconut until fully coated. Place them on a parchment-lined tray.
Chill Again
Refrigerate the coated truffles for about 30 minutes to firm up before serving.
