Directions

1

Prepare the Potatoes

Preheat your oven to 425°F (220°C). Wash and scrub the baby potatoes, then place them in a large pot of salted water. Bring to a boil and cook for about 15-20 minutes, until fork-tender.

2

Drain and Cool

Once the potatoes are cooked, drain them and let them cool for a few minutes. This will make them easier to handle.

3

Crush the Potatoes

On a baking sheet lined with parchment paper, place the potatoes and use the bottom of a cup or a potato masher to gently crush each potato until flattened but still holding together.

4

Season and Bake

Drizzle the crushed potatoes with olive oil and sprinkle with garlic powder, paprika, salt, and black pepper. Toss gently to coat. Bake in the preheated oven for about 25-30 minutes, or until golden brown and crispy.

5

Garnish and Serve

Remove from the oven, sprinkle with fresh parsley, and serve warm.
