Mix the beef

Place the ground beef in a large bowl. Add kosher salt, black pepper, Worcestershire sauce, and garlic powder. Gently mix with your hands or a spatula until combined — avoid overworking the meat to keep patties tender.

Form patties

Divide the mixture into 2 equal portions (about 0.5 lb each). Shape each portion into a round patty about 3/4 inch thick and slightly wider than your buns. Make a shallow dimple in the center of each patty with your thumb to prevent puffing while cooking.

Chill briefly (optional)

If time allows, place the patties on a plate, cover, and refrigerate for 15–30 minutes to help them hold shape during cooking.

Cook patties

Heat a cast-iron skillet or grill over medium-high heat and lightly oil the surface. When hot, place patties on the skillet. Cook 3–4 minutes on the first side without moving to develop a crust. Flip and cook another 3 minutes for medium (adjust time for desired doneness). In the last minute of cooking, place a slice of cheddar on each patty and cover the pan or close the grill to melt the cheese.

Rest patties

Transfer cooked patties to a plate and tent loosely with foil. Let rest 3–5 minutes to allow juices to redistribute.

Prepare buns

Split the buns and spread butter on the cut sides. Toast them butter-side down in a separate skillet over medium heat or on the grill for 1–2 minutes, until golden and slightly crisp.

Prepare sauces

In a small bowl combine mayonnaise, ketchup, and mustard. If using hot sauce, add it here to taste. Stir until smooth.

Assemble burgers

On the bottom bun spread a generous spoonful of the sauce. Place a lettuce leaf, then the rested beef patty with melted cheddar. Top with tomato slice(s), red onion, and pickle slices. Add cooked bacon if using. Spread a little sauce on the top bun and place it on the burger.

Serve

Serve immediately with your choice of sides (fries, salad, or chips).

Wipe down cutting boards and surfaces used for raw beef with hot soapy water. Wash hands and utensils that contacted raw meat. Tip: use a meat thermometer — 160°F (71°C) is recommended for ground beef by many food-safety authorities for well-done.
