1. Making the Filling

In a mixing bowl, combine the cooked lobster meat, ricotta cheese, grated Parmesan cheese, egg, salt, black pepper, and nutmeg. Mix until well combined and set aside.

2. Preparing the Pasta Dough

On a clean surface, make a mound with the flour and create a well in the center. Add the egg and olive oil into the well. Gradually mix the flour into the egg using a fork until a dough forms. Knead the dough for about 5-7 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

3. Rolling Out the Dough

After resting, divide the dough into four pieces. Roll out each piece using a pasta machine or a rolling pin until very thin (about 1/16 inch thick).

4. Assembling the Ravioli

Place a teaspoon of the lobster filling about 2 inches apart over half of the rolled-out dough. Moisten the edges of the dough with water. Fold the other half over the filling and press to seal, ensuring no air is trapped inside. Cut out individual ravioli using a knife or a ravioli cutter.

5. Cooking the Ravioli

Bring a large pot of salted water to a boil. Add the ravioli and cook for about 4-5 minutes or until they float to the surface and are cooked through. Remove with a slotted spoon.

6. Serving

Serve the ravioli with your choice of sauce, such as a light cream sauce or a tomato-based sauce.
