Cheesecake
Prepare the crust
In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated and resemble wet sand.
Form the crust
Press the mixture firmly into the bottom of a 9-inch springform pan. Ensure it is evenly distributed and compact.
Bake the crust
Preheat the oven to 350°F (175°C) and bake the crust for 8-10 minutes until lightly golden. Remove from oven and let cool.
Make the filling
In a large bowl, beat 4 packages (8 oz each) of cream cheese until smooth. Gradually add 1 cup of granulated sugar and 1 tsp of vanilla extract, mixing until well combined.
Add eggs
Add 4 large eggs one at a time, mixing on low speed after each addition just until incorporated. Avoid overmixing.
Pour filling into crust
Pour the cheesecake filling into the cooled crust, smoothing the top with a spatula.
Bake the cheesecake
Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly.
Cool and chill
Turn off the oven, crack the door, and let the cheesecake cool for 1 hour. Then refrigerate for at least 4 hours or overnight before serving.
