Prepare batter

If using store-bought or refrigerated fermented idly batter, gently stir it to uniform consistency and add 1 tsp salt. If batter is thick, add 2–4 tbsp water to reach a pourable but slightly thick consistency (like pancake batter). Taste to confirm salt.

Tawa stuffing and tempering

Heat tawa and oil

Place a large flat tawa or nonstick skillet over medium heat. Add 2 tbsp oil and let it heat until it shimmers but does not smoke.

Temper spices

Add mustard seeds. When they start to pop, add urad dal and chana dal. Fry until the dals turn golden brown. Add a pinch of asafoetida and curry leaves; sauté for a few seconds.

Sauté aromatics and vegetables

Add the chopped green chilies and chopped onion. Sauté on medium heat until the onions turn translucent and slightly golden (4–5 minutes). Add grated carrot and green peas; cook for 2–3 minutes until vegetables are just tender. Stir in turmeric powder and red chili powder; mix well.

Season vegetable mixture

Add amchur or lemon juice and chopped coriander leaves. Adjust salt if needed. Remove the sautéed mixture to a bowl and keep warm.

Grease tawa and arrange batter

Wipe the tawa clean if required. Increase heat to medium-high and spread remaining 2 tbsp oil in a circular motion over the surface. Reduce heat to medium. Pour ladlefuls (about 1/3 cup each) of idly batter onto the tawa spaced apart, making 6–8 round discs (similar to small pancakes). Do not spread the batter — allow it to settle into rounds.

Cook idly discs

Cover the tawa with a lid or large inverted pan to trap steam. Cook for 2–3 minutes until the bottoms are set and light golden. After 2–3 minutes remove the lid and check; if steam has accumulated, tilt lid to release excess. Using a thin spatula, flip each disc gently and spread a little of the sautéed vegetable mixture on the cooked side. Press lightly to adhere.

Second side and steaming

Cover again and cook for another 2–3 minutes until the second side is cooked and both sides have golden brown patches. For slightly softer, steamed idly texture, after flipping and topping, pour 1–2 tbsp water around the edges of the tawa (not on the discs), quickly cover and steam for 1–2 minutes.

Finishing and serving

Finish with ghee and coconut

Once cooked, transfer the tawa idlies to a plate. Drizzle each disc with a little ghee or melted butter and sprinkle grated coconut if using.

Serve

Serve hot with tomato or coconut chutney and sambar on the side. Store any leftovers refrigerated for up to 1 day; reheat on a hot tawa with a little ghee.
