Soak
Rinse rice thoroughly until water runs clear. Rinse urad dal and moong dal separately. In separate bowls, combine rice with enough water to cover (about 2 cups) and add fenugreek to the urad-dal bowl. Soak rice and the dal+fenugreek for 4–6 hours (or overnight) at room temperature.
Grind batter
Drain the soaked urad dal and fenugreek; reserve some soaking water. Grind the urad dal to a smooth, light, and slightly fluffy paste in a wet grinder or high-speed blender, adding reserved water little by little (use about 3/4 cup of the reserved water) to reach a thick but flowing consistency. Next grind the rice (and optional moong dal) to a slightly coarse smooth batter, adding water as needed so the rice paste is a bit grainy but pourable. Combine rice and urad batters in a large bowl, mix thoroughly by hand (this helps fermentation). Add 1 tsp salt, cover, and keep in a warm place to ferment for 8–12 hours or until doubled in volume and slightly bubbly. If time is short, keep in warm oven (turned off) or near a warm appliance.
Adjust batter
After fermentation, stir the batter gently. If very thick, thin with up to 1/2 cup water to reach a pourable, flowing dosa batter (like heavy cream). Taste and adjust salt.
Paruppu podi
Dry-roast lentils
Heat a heavy skillet on medium heat. Add chana dal and toor dal (or extra chana) and dry-roast, stirring constantly, until they turn golden brown and aromatic, about 4–6 minutes. Transfer to a plate to cool. In the same pan, roast urad dal until golden (2–3 minutes) and transfer to plate as well.
Roast chilies and sesame
Lower heat to medium-low. Add the dry red chilies and roast until they puff slightly and become fragrant (about 30–60 seconds each side). Remove and cool with the dals. Then add sesame seeds and roast until aromatic and lightly golden (1–2 minutes). Transfer to cooling plate.
Finish roasting
In the same pan, add 1 tsp oil and a pinch of asafoetida; heat briefly and turn off. This step is optional but helps bloom the hing. Cool all roasted ingredients completely to room temperature to avoid moisture in the powder.
Grind podi
In a clean, dry spice grinder or small blender, add cooled roasted dals, chilies (break large chilies into pieces), sesame seeds, and salt. Grind to a coarse or fine powder according to preference. Pulse to avoid overheating; stop and shake grinder if it warms. Taste and add more salt if needed. Transfer to an airtight jar. Paruppu podi will keep well for 2–3 weeks at room temperature or longer refrigerated.
To finish and cook
Prepare pan
Heat a nonstick or cast-iron tawa (griddle) over medium-high heat until hot. Sprinkle a few drops of water — it should sizzle and evaporate quickly. Reduce heat to medium for control.
Make dosa
Stir the fermented dosa batter gently. Ladle about 1/3 to 1/2 cup batter (adjust for pan size) onto the center of the hot tawa. Immediately using the back of the ladle, spread the batter outward in concentric circles to a 7–9 inch diameter thin circle. Drizzle 1/2 tsp oil or ghee around the edges and a few drops on top. Cook for 1–2 minutes until the underside is golden brown and edges lift. If you prefer crispier dosas, increase heat slightly and cook until well-browned. Flip only if you want both sides cooked; traditional dosa is cooked only on one side for crispness. Cook the other side 20–30 seconds if flipped.
Serve with paruppu podi
Transfer dosa to a plate. Immediately sprinkle or smear a thin layer of paruppu podi on top of the dosa and dot with a little melted ghee or butter (about 1/2 tsp per dosa) so the podi adheres and releases aroma. Alternatively, place a small bowl of podi mixed with oil/ghee at the table for dipping.
Repeat
Repeat making dosas with remaining batter, reheating the pan between dosas and wiping any burnt bits. Use remaining oil/ghee as needed.
