Prepare batter

Check and adjust batter

If using refrigerated dosa batter, bring it to room temperature for 15–30 minutes. Stir well. The batter should be pourable but not watery — similar to heavy cream. If too thick, whisk in 1–2 tablespoons water at a time until it reaches spreading consistency. Stir in 1 tsp salt.

Prepare egg mixture

Crack the 4 eggs into a bowl. Add the finely chopped onion, chopped green chili (if using), chopped cilantro, turmeric powder (optional), and freshly ground black pepper. Beat lightly with a fork until combined but not frothy. Season with a pinch of salt if desired (remember the batter already contains salt).

Heat the pan

Heat a nonstick or well-seasoned cast-iron tawa/skillet over medium-high heat for 2–3 minutes. To test, sprinkle a few drops of water — they should sizzle and evaporate quickly.

Grease the pan

Reduce heat to medium. Pour about 1 teaspoon of oil on the hot tawa and spread evenly with a paper towel or a cut onion.

Spread the batter

Pour 1/3 to 1/2 cup of batter in the center of the pan (depending on desired dosa size). Immediately with the back of a ladle or the bottom of a small bowl, spread the batter outward in a circular motion to form a thin, even crepe about 8–10 inches (20–25 cm) diameter. If the batter is too thick to spread, add a tablespoon of water and try again on the next dosa.

Drizzle oil around edges

Drizzle about 1/2 teaspoon oil around the perimeter of the dosa and a little in the center to help it crisp and prevent sticking.

Pour egg mixture

When the edges begin to lift and the surface is still slightly wet but mostly set (about 30–45 seconds), tilt the pan slightly and pour approximately 1/4 of the beaten egg mixture evenly over the dosa surface. Alternatively, pour the egg in four spots and spread gently with a spatula to cover the dosa thinly. Work quickly so the egg contacts the hot batter and begins to set.

Cook until set

Lower heat to medium-low. Let the egg set for 1–2 minutes. If you prefer the egg fully cooked through, cover the pan with a lid for 30–45 seconds to steam-cook the egg. For a slightly runny yolk, cook without covering and remove when the egg white is set but yolk still soft.

Finish and fold

Once the egg is cooked to your preference, optionally drizzle a little ghee or oil over the dosa for flavor and crispness. Using a spatula, fold the dosa in half or roll it up and transfer to a serving plate. Repeat the process for remaining dosas, adding oil to the pan as needed.

Serve egg dosas hot with coconut chutney, sambar, or tomato chutney/ketchup on the side. Garnish with extra chopped cilantro and a grind of black pepper if desired.
