Chole (Chickpea Curry)

Soak chickpeas

Rinse 2 cups dried chickpeas until water runs clear. In a large bowl, combine chickpeas, 6 cups water and 1/4 tsp baking soda. Soak at least 8 hours or overnight at room temperature.

Pressure cook chickpeas

Drain soaking water and rinse the chickpeas. Transfer to a pressure cooker or Instant Pot, add 3–4 cups fresh water to cover and 1/2 tsp salt (part of total). Cook: Pressure cooker — 5–6 whistles (~25–30 minutes) until tender; Instant Pot — high pressure 35 minutes with natural release. Reserve cooking liquid; you’ll need 1–1.5 cups for curry consistency.

Prepare tadka (base)

Heat 3 tbsp oil or ghee in a heavy skillet over medium heat. Add 1 tsp cumin seeds and 1 bay leaf. When cumin sizzles (10–15 seconds), add 1 cup finely chopped onion. Sauté 6–8 minutes until golden brown, stirring frequently. Add 1 tsp ginger paste, 1 tsp garlic paste and 1 slit green chili; cook 1 minute until fragrant.

Build the masala

Add 1.5 cups tomato puree to the pan. Cook 6–8 minutes until oil separates from the masala. Add 1/2 tsp turmeric, 1 tsp red chili powder, 2 tsp coriander powder and 1 tsp cumin powder. Stir and cook 2–3 minutes to cook raw spice flavor.

Combine chickpeas and simmer

Add the cooked chickpeas to the masala along with 1–1.5 cups reserved chickpea cooking liquid (start with 1 cup; add more for thinner gravy). Add remaining salt (adjust total to 1.5 tsp), 1 tsp amchur powder, and gently stir. Simmer uncovered 10–15 minutes on medium-low so flavors meld and gravy thickens slightly. Mash a few chickpeas against the side of the pan to thicken.

Finish and garnish

Stir in 1/2 tsp garam masala and 1 tsp crushed kasuri methi. Cook 1 minute. Turn off heat and stir in 1/4 cup chopped cilantro. Adjust seasoning and lemon juice to taste (optional). Keep warm until serving.

Bhature (Deep-fried Puff Bread)

Activate yeast

In a small bowl, combine 1 tsp active dry yeast, 1 tsp sugar and 1/4 cup warm water (about 100–110°F / 38–43°C). Let sit 8–10 minutes until frothy. If it doesn’t froth, the yeast may be inactive — start again with fresh yeast.

Make dough

In a large bowl, whisk together 2 cups all-purpose flour, 1/4 cup fine semolina, 1/4 tsp baking powder and 1/2 tsp salt. Make a well and add 1 tbsp oil, 1/2 cup plain yogurt and the activated yeast mixture. Gradually add up to 1/4 cup warm water if needed and mix to form a soft, slightly sticky dough. Knead 6–8 minutes until smooth and elastic.

Proof dough

Lightly oil the bowl, place the dough inside and cover with a damp cloth or plastic wrap. Let it rise in a warm place for 1–1.5 hours, until roughly doubled in size. For a quicker puff and softer bhature, punch down the dough, knead briefly, then cover and rest another 15–30 minutes.

Shape bhature

Divide dough into 8 equal portions (about 70–75 g each). Roll each portion into a smooth ball. Dust lightly with flour and roll into 6–8 inch circles, slightly thicker than a chapati (~2–3 mm). Do not roll too thin or they won’t puff well.

Fry bhature

Heat 4 cups oil in a deep heavy-bottomed pan to 350–375°F (175–190°C). To test, drop a small dough scrap — it should sizzle and rise immediately. Carefully slide one rolled bhatura into hot oil. Using a slotted spoon, press it gently so it puffs and cooks evenly. Fry 15–30 seconds per side until golden brown and puffed. Remove and drain on paper towels. Repeat with remaining dough, maintaining oil temperature between batches.

Serve

Serve bhature hot alongside the prepared chole. Optionally garnish the chole with sliced onions, lemon wedges and a spoon of pickle. Bhature are best fresh and puffed — reheat briefly in hot oil or on a hot skillet if needed.

Notes & Tips

If short on time, you can use 3 cans (about 15 oz each) cooked chickpeas (drained) — add 1 cup water or vegetable stock and simmer 10–12 minutes to blend flavors. Adjust spices and amchur accordingly.

For a richer chole, add 1 tbsp butter or ghee at the end. To make bhature lighter, allow dough to ferment a bit longer (2–3 hours) in a warm spot.
