In a small bowl, whisk together sour cream, prepared horseradish, lemon juice, and salt until the horseradish cream is smooth and evenly mixed. Set aside.

Prepare salmon
Pat the smoked salmon slices dry with paper towels and arrange them on a plate for easy access during assembly.

Assemble quesadillas
On each tortilla, spread a thin layer of horseradish cream, sprinkle cheddar cheese, lay two smoked salmon slices, and top with a little more cheddar. Top with a second tortilla. Repeat for all quesadillas.

Fry each quesadilla in the buttered skillet until the bottom is golden brown and crisp, about 3-4 minutes. Carefully flip and cook the other side for another 3-4 minutes, until cheese is melted and filling is heated through.

Transfer cooked quesadillas to a cutting board. Let rest 1-2 minutes, then slice into wedges. Garnish with chopped dill if using and serve with any remaining horseradish cream on the side.
