    Prep Halibut

    Pat halibut fillets dry with paper towels. Season both sides with salt and pepper.

    Sear Halibut

    Heat 2 tablespoons olive oil in a skillet over medium-high heat. Add halibut and cook 2–3 minutes per side until just opaque in the center.

    Finish and flavor

    Add 1 tablespoon lemon juice to the pan in the final 15 seconds and baste the fillets. Remove from heat and let rest briefly before serving.

Rice

    Rinse and prepare rice

    Rinse 1 cup long-grain white rice under cold water until the water runs clear.

    Cook rice

    In a saucepan, combine rinsed rice, 2 cups water, 0.5 teaspoon salt, and 1 teaspoon butter. Bring to a boil, reduce heat to low, cover, and simmer 15–18 minutes until tender and the water is absorbed. Fluff with a fork before serving.

Ratatouille

    Prepare vegetables

    Dice eggplant, zucchini, and peppers. Dice onion. Mince garlic.

    In a large skillet, heat 1 tablespoon olive oil over medium-high heat and sauté onion and garlic until translucent, about 3–4 minutes.

    Stir in chopped tomatoes, 1 tablespoon olive oil, thyme, oregano, salt, and pepper. Simmer 15–20 minutes until vegetables are tender and sauce thickens. Adjust seasoning to taste.
