    Preheat the oven to 400°F (200°C). Wrap the beets in foil and roast until tender, about 45-60 minutes. Let cool, then peel and dice.

    Toast pecans in a dry skillet over medium heat until fragrant and golden, about 3-5 minutes. Cool and roughly chop.

    In a small bowl, whisk together olive oil, lemon juice, orange juice, Dijon mustard, honey, orange zest, salt, and pepper until emulsified.

    Rinse the romaine; pat dry and chop into bite-sized pieces; place in a large salad bowl.
