Whisk together flour and salt. Cut in cold butter with fingertips until the mixture resembles coarse crumbs. Drizzle in cold water, 1 tablespoon at a time, until a cohesive dough forms. Gather into a disk, wrap, and chill 30 minutes.

Roll dough on a lightly floured surface to about 12 inches, then transfer to a 9-inch pie dish. Trim edges, dock with a fork, and line with parchment. Fill with pie weights or dried beans and par-bake at 375°F (190°C) for 15 minutes. Remove weights and parchment and bake 5 more minutes until just set.

In a large bowl, whisk eggs, heavy cream, and milk with salt, pepper, and a pinch of nutmeg until well combined.

Stir in diced ham and grated Gruyère cheese to the egg mixture.
