Starters
- 1
Make the ginger dressing
In a small bowl, whisk together grated ginger, rice vinegar, lime juice, soy sauce, honey, and sesame oil. Adjust seasoning with a pinch of salt if needed. Set aside to allow flavors to meld.
- 2
Prepare potato pancake batter
Rinse or wrap grated potatoes in a clean towel and squeeze out excess moisture. Transfer to a bowl. Add the egg, flour, cornstarch, salt, and pepper. Mix until just combined; the mixture should hold together but not be overly dense.
- 3
Form and fry potato pancakes
Heat the neutral oil in a large skillet over medium-high heat. Scoop about 1/4 cup of batter per pancake, flatten into discs about 1/4 inch thick. Fry 3-4 pancakes at a time until golden brown and crisp on both sides, about 3-4 minutes per side. Transfer to a paper towel-lined plate to drain.
- 4
Warm the lobster
In a separate skillet, warm the lobster meat over low heat until heated through, about 1-2 minutes. Season lightly with a pinch of salt if desired.
- 5
Assemble and serve
Place a crisp potato pancake on each plate. Top with warm lobster meat. Drizzle the ginger dressing over the top and around the plate. Garnish with sliced green onions (optional). Serve immediately.
