    Prep and dredge

    Season the beef with pepper. Dredge the beef cubes in the flour to coat evenly.

    Render bacon

    In a heavy pot, heat olive oil and render the bacon until crisp. Remove bacon with a slotted spoon and set aside.

    Brown meat

    Working in batches, sear the beef cubes until browned on all sides. Transfer to a plate.

    Vegetables

    In the same pot, add onion and carrot. Cook until softened, about 5 minutes. Add garlic and cook 1 more minute.

    Deglaze and flavor

    Stir in tomato paste, then pour in red wine to deglaze the pot. Bring to a simmer and reduce by half.

    Braise

    Return beef and bacon to the pot. Add beef stock, bay leaf, and dried thyme. Bring to a simmer, then cover and braise on low heat (or in a 325°F/165°C oven) for 2.5–3 hours, until beef is very tender.

    Mushrooms

    In a skillet, melt butter and sauté mushrooms until golden and their moisture has evaporated. Add mushrooms to the stew during the last 30 minutes of braising.

    Finish and serve

    Remove bay leaf and thyme stems. Adjust seasoning with salt and pepper to taste. The stew can be finished with a final knob of butter for extra richness. Serve the bourguignon over creamy mashed potatoes.

Mashed Potatoes

    Cook potatoes

    Place potatoes and minced garlic in a large pot. Cover with salted water and bring to a boil. Simmer until potatoes are very tender, about 15–20 minutes.

    Drain well. Return potatoes (and garlic) to the pot and mash until smooth.

    Enrich

    Stir in butter until melted and creamy.

    Creaminess

    Pour in warm milk gradually, mixing until the potatoes reach your desired consistency. Season to taste with salt and pepper.

    Keep potatoes warm until plating. Spoon the beef bourguignon over or alongside the mashed potatoes.
