In a large skillet, heat the olive oil over medium heat. Add the thinly sliced garlic and sauté until golden brown and crispy, about 2-3 minutes. Be careful not to burn the garlic.
Add the fresh spinach and arugula to the skillet with the crispy garlic. Cook for about 3-5 minutes, stirring frequently, until the greens are wilted.
Remove the skillet from heat. Stir in the lemon zest, salt, and black pepper to taste. Mix well to combine all flavors.
