Prep and oven setup

    Heat wood-fired oven

    Build and light a wood fire in your wood-fired oven and bring it to a steady high temperature appropriate for roasting (about 450–550°F / 230–290°C at the oven floor). Allow flames to subside and embers to distribute so you have stable radiant heat. If you have an infrared thermometer, target a stone floor temperature around 500°F (260°C). This should take 30–60 minutes depending on your oven and wood.

    While the oven heats, scrub the oyster shells under cold running water to remove grit. Keep oysters chilled until just before shucking. Spread the rock salt in an even layer on a baking sheet or in a shallow pan large enough to hold the oysters; this creates a stable bed so oysters sit level when placed in the oven.

Make garlic-shallot butter

    Cook aromatics

    In a small skillet over medium heat (you can do this on a burner while the oven heats), melt the unsalted butter with 1 teaspoon olive oil. Add the minced garlic and minced shallot and sauté gently until soft and fragrant, about 1–2 minutes. Do not brown — you only want to soften and release aroma.

    Remove pan from heat and stir in the fresh lemon juice, chopped parsley, smoked paprika, red pepper flakes, sea salt, and black pepper. Allow mixture to cool for 2 minutes, then taste and adjust seasoning. Stir in the grated Parmesan and panko breadcrumbs until combined. If using compound herb butter instead of plain butter, fold it in here and reduce the melted butter quantity slightly as desired.

Shuck and dress oysters

    Shuck oysters

    Using an oyster knife and a thick towel or glove for protection, carefully shuck each oyster, keeping as much of the liquor (the natural juices) in the cup shell as possible. Discard the top shell. Rinse any shell fragments away gently and place each oyster in its deeper half shell on the prepared salt bed so they sit level.

    Using a small spoon, place about 1/2 teaspoon to 1 teaspoon of the garlic-shallot butter mixture onto each oyster (adjust according to oyster size). The goal is a thin layer that will melt and glaze the oyster, not overwhelm it. If using compound butter, place a small dollop instead. Sprinkle a tiny pinch of extra panko or a few grains of Parmesan on top of each for color and texture if desired.

Wood-fired oven cooking

    Position oysters in the oven

    Place the tray with oysters and salt bed into the oven on the floor or a low rack where they will receive strong radiant heat but not direct flame contact. Close the oven door to maintain heat. If your oven has significant hotspots, rotate the tray halfway through cooking.

    Cook oysters until the butter is bubbling, edges of the oysters begin to firm, and the topping is lightly golden — typically 4–7 minutes depending on oven temperature and oyster size. Watch closely: wood-fired ovens cook quickly and temperatures vary.

Finish and serve

    Remove oysters from the oven using heatproof gloves and a sturdy peel or pan lifter. Transfer the tray to a stable surface. Optionally, squeeze a few drops of fresh lemon juice over each oyster, add a small sprinkle of chopped parsley, and, if desired, a dash of hot sauce or a small pat of compound herb butter on each for extra richness.

    Serve immediately while hot with lemon wedges alongside. Advise guests to use an oyster fork to loosen the oyster from the shell if needed and enjoy directly from the shell. Discard any oysters that did not open during shucking prior to cooking for safety.
