Chill glassware and ingredients
Place Champagne flutes (or serving glasses) in the refrigerator or freezer for at least 15 minutes. Keep the bottle of sparkling wine and the freshly squeezed orange juice well chilled until ready to serve.

Juice oranges
If using fresh oranges, roll them on the counter with the palm of your hand to loosen juices, then cut in half and juice until you have about 3 cups (approximately 6–8 medium oranges). Strain the juice through a fine sieve into a pitcher to remove pulp and seeds if you prefer a smoother drink.

Optional sugar rim
If you want a sugared rim, pour 2 teaspoons sugar onto a small plate. Moisten the rims of the chilled glasses with a thin slice of orange, then dip the rims into the sugar so they adhere. Return glasses to the refrigerator while you assemble drinks.
Assemble and Serve

Pour the orange juice
Fill each chilled Champagne flute about one-third full with the chilled fresh orange juice (roughly 2 to 3 ounces / 60–90 ml per flute).

Top with sparkling wine
Carefully top each glass with chilled Champagne or dry sparkling wine. Pour slowly down the side of the glass to preserve bubbles and avoid foaming over. The classic ratio is about 1 part orange juice to 2 parts sparkling wine, but adjust to taste.

Garnish and finish
Optionally twist a thin strip of orange peel over the glass to express oils, then drop it or place a small orange slice on the rim. Sprinkle a little orange zest on top if desired. Serve immediately while fizzy and cold.
