    Make simple lemon syrup

    Zest one small lemon lightly (optional) and set aside for garnish or added aroma. In a small bowl or measuring cup, combine the granulated sugar and warm water and stir until the sugar dissolves completely to create a simple syrup base (about 30–60 seconds).

    Add the freshly squeezed lemon juice to the dissolved sugar mixture and stir until fully incorporated. Taste and adjust sweetness by adding up to 1 additional tablespoon sugar if the lemon is very tart. Chill this lemon juice mixture in the refrigerator for at least 10 minutes to bring the temperature down (or place the container over an ice bath for 3–5 minutes if short on time).

Bellini Assembly

    Chill the flutes or coupe glasses by placing them in the refrigerator for several minutes or by filling briefly with ice water while you prepare the lemon base. If using ice cubes to chill, you can fill a mixing glass with ice; otherwise proceed with chilled ingredients only.

    Pour 2 tablespoons (approximately 1 ounce) of the chilled lemon juice base into each Champagne flute. This ratio yields a bright but not overpowering citrus foundation—adjust to taste, using 1–3 tablespoons per glass depending on desired tartness.

    Slowly top each flute with chilled Prosecco (about 5 ounces / 1/2 cup per glass), pouring gently down the side of the glass to preserve bubbles and avoid excessive foaming. Pour until the glass is nearly full, leaving a small gap at the top to prevent overflow.

    Using the back of a bar spoon, very gently stir once or twice if needed to combine the lemon base with the sparkling wine. Do not vigorously mix; you want to preserve effervescence.
