    Prepare fruit

    Wash the strawberries and raspberries (if using fresh) and hull the strawberries. Halve or quarter strawberries depending on size so pieces are bite-sized (about 1 cup after halving). Core the pear and thinly slice it into 1/8-inch slices; if you prefer, toss pear slices with a teaspoon of lemon juice to slow browning.

    Assemble base

    Place 6 cups of spring mix in a large salad bowl. Gently toss to loosen and aerate the greens.

    Add toppings

    Scatter the halved strawberries and sliced pear evenly over the spring mix. Sprinkle 3 ounces of crumbled goat cheese and 3 ounces of roughly chopped candied pecans over the top. If using, tuck fresh mint leaves among the greens and sprinkle the lemon zest over the salad for brightness.

Raspberry Vinaigrette

    If using fresh raspberries, rinse and drain them. Place 3 ounces raspberries in a blender or food processor with 2 tablespoons warm water and blend until smooth. If you prefer a seed-free dressing, press the puree through a fine mesh sieve into a small bowl, discarding the seeds.

    To the raspberry puree, add 2 tablespoons red wine vinegar, 1 tablespoon honey (or maple syrup), 1 teaspoon Dijon mustard, 1 teaspoon salt, and 1/2 teaspoon freshly ground black pepper. Whisk to combine.

    While whisking continuously, slowly drizzle in 6 tablespoons extra-virgin olive oil until the vinaigrette emulsifies and thickens. Taste and adjust seasoning: add more honey if it needs sweetness, more vinegar if it needs brightness, or a tablespoon or two of water to thin to desired consistency.

    Transfer the vinaigrette to a jar with a lid and refrigerate for up to 3 days; shake well before using.

To serve

    Just before serving, drizzle about 3 to 4 tablespoons of raspberry vinaigrette over the salad (start with less; you can always add more). Gently toss the salad to coat the greens and distribute toppings without crushing the fruit.

    Divide the salad among 4 plates or bowls. Finish with a few extra crumbles of goat cheese and a couple of candied pecans per serving for presentation. Serve immediately.
