    Prepare spinach

    Bring a medium pot of water to a boil. Add the fresh spinach and blanch for 30 seconds to 1 minute until wilted. Immediately transfer spinach to a bowl of ice water to stop cooking. Drain well and squeeze out as much liquid as possible using a clean kitchen towel or paper towels. Roughly chop and set aside.

    Prep artichokes

    Drain and roughly chop the artichoke hearts into bite-sized pieces. If using frozen, thaw and drain thoroughly.

    Soften cream cheese

    If the cream cheese isn't softened, microwave it in a microwave-safe bowl for 15–20 seconds until easily spreadable but not melted.

    Combine base ingredients

    In a large mixing bowl, add the softened cream cheese, sour cream, and 1 tablespoon mayonnaise. Beat with a hand mixer or whisk until smooth and lump-free.

    Add cheeses and aromatics

    Stir in 1 cup shredded mozzarella and 1 tablespoon grated Parmesan, the minced garlic, lemon juice, salt, black pepper, and crushed red pepper flakes (if using). Mix until evenly distributed.

    Fold in spinach and artichokes

    Add the chopped, well-drained spinach and chopped artichoke hearts to the bowl. Fold until everything is evenly incorporated.

    Add green onions

    Stir in two of the sliced green onions (reserve one for garnish). Taste and adjust seasoning as needed.

Bake & Finish

    Prepare oven and baking dish

    Preheat the oven to 375°F (190°C). Lightly brush or spray a 1-quart (or similar) ovenproof baking dish with the optional 1 teaspoon olive oil to prevent sticking.

    Transfer and top

    Spoon the spinach and artichoke mixture into the prepared baking dish. Smooth the top and sprinkle evenly with the remaining 1 cup shredded mozzarella and 2 teaspoons grated Parmesan.

    Bake

    Bake in the preheated oven for 20–25 minutes until the dip is bubbly around the edges and the top is lightly golden. For a browned top, place under the broiler for 1–2 minutes—watch closely to prevent burning.

    Garnish

    Remove from oven and let rest 5 minutes. Sprinkle the reserved sliced green onion over the top. If desired, drizzle a few drops of olive oil or sprinkle additional red pepper flakes.

    Serve

    Serve warm with tortilla chips, pita chips, or sliced baguette. Transfer to a warmed serving bowl if desired to keep warm while serving.
