Bring to room temperature
Remove steaks from refrigerator 30–60 minutes before cooking (depending on thickness). Pat dry thoroughly with paper towels to remove surface moisture — this ensures a good sear.

Season
Season both sides and the edges generously with kosher salt, then evenly with freshly ground black pepper and garlic powder if using. Press seasonings gently into the meat so they adhere.
Searing & Oven Finish

Preheat oven
Preheat oven to 400°F (200°C). Position a rack in the middle of the oven. Use an oven-safe skillet (cast iron recommended).

Heat pan
Place the skillet over high heat until very hot, about 3–5 minutes. Add the neutral oil and swirl to coat; heat until shimmering but not smoking heavily.

Sear steaks
Carefully add the filets to the pan, spacing them so they do not crowd. Sear without moving for 2–3 minutes until a deep brown crust forms. Flip and sear the second side 2 minutes to form crust on the other side.

Baste and aromatics
Reduce heat to medium-high. Add the unsalted butter, smashed garlic cloves, thyme sprigs, and rosemary (if using). As butter melts, tilt the pan slightly and use a spoon to continuously baste the steaks with the melted butter and pan juices for about 30–60 seconds to build flavor.

Finish in oven
Transfer the skillet to the preheated oven. Roast until the internal temperature reaches your target: 120–125°F (49–52°C) for rare, 125–130°F (52–54°C) for medium-rare, 130–135°F (54–57°C) for medium. For 1.5–2 inch filets, expect 4–8 minutes in the oven depending on thickness and desired doneness. Use an instant-read thermometer inserted into the center to check temperature.

Rest
Remove skillet from oven and transfer steaks to a cutting board or warm plate. Tent loosely with foil and rest 5–10 minutes. Carryover cooking will raise the temperature a few degrees.
