    Prepare and arrange meats

    Remove cured meats from packaging and lay them on a cutting board. For prosciutto and capicola, fold each slice into loose ribbons or rolls (fold in half lengthwise and then loosely roll) to create height and easy picking. For pistachio mortadella, stack two slices and fold into quarters or roll. For pastrami, fan several thin slices slightly overlapping to showcase texture. Arrange each type of meat in its own small cluster on the board, leaving space between clusters for cheeses and condiments.

    Bring cheeses to serving temperature

    Remove cheeses from the fridge 30–60 minutes before serving so they come to room temperature and develop full flavor and aroma. Keep the brie whole; leave the rind intact.

    Cut and place cheeses

    Place cheese wedges and the whole brie on the board with space around each. Partially pre-cut harder cheeses: cut a few thin slices from the red dragon cheddar and fan them nearby. For the smokey blue cheese, crumble a little into a small pile so guests can spoon it, leaving the remainder as a wedge. For the brie, leave whole and provide a small knife for spreading; drizzle honey over half the brie just before serving so some guests can enjoy a sweet pairing while others can take plain brie.
