Clean and chill oysters
Rinse the oyster shells under cold running water, scrubbing off any grit or seaweed with a stiff brush. Discard any oysters with cracked shells or that do not close when tapped. Place crushed ice in a large shallow serving platter or tray and arrange oysters on the ice to keep them cold while you prepare the sauce.

Shuck oysters
Set an oyster flat-side up on a towel or in a glove. Hold the oyster firmly and insert the tip of the oyster knife into the hinge. Twist the knife to pop the hinge, then run the blade along the top shell to cut the muscle and lift the top shell off. Discard the top shell. Slide the knife beneath the oyster meat to free it from the bottom shell, leaving the oyster in its liquor in the bottom shell. Repeat for all oysters, returning each to bed of ice.

Just before serving, place a lemon wedge alongside oysters. Serve oysters cold on the bed of crushed ice so they remain chilled throughout service.
Classic Mignonette Sauce

Combine ingredients
In a small bowl, combine the red wine vinegar, finely minced shallots, freshly cracked black pepper, sea salt, and granulated sugar (if using). Stir until the salt and sugar dissolve.

Transfer the mignonette to small ramekins for table service and refrigerate if you make it more than 30 minutes ahead. Bring back to cold but not frozen before serving.

To eat: spoon a small amount of mignonette over each oyster or squeeze a touch of lemon, then slurp the oyster and its liquor from the shell. Discard shells on a separate plate.

Leftovers: consume fresh oysters the same day. Discard any oysters that smell off or have an altered appearance.
