Prepare fish
Pat the grouper fillets very dry with paper towels. Trim any ragged edges so each fillet is an even thickness (about 3/4–1 inch). Season both sides with 1 tsp kosher salt, 1 tsp black pepper, and 1 tsp paprika. Lightly dust both sides with 1 tablespoon all-purpose flour and shake off excess.

Sear
Heat a large skillet over medium-high heat until hot. Add 2 tablespoons olive oil and 1 tablespoon butter. When the butter foams and the pan is hot (but not smoking), place the fillets in the pan, spaced apart. Sear without moving for 3–4 minutes, until the underside is golden brown. Flip and reduce heat to medium. Add a squeeze of half the lemon over the fish. Cook 2–3 more minutes until the fish is opaque and flakes easily (internal temp about 135–140°F/57–60°C). Transfer to a plate and let rest 2 minutes.

Finish
Spoon any pan juices over the fillets and keep warm while you toast the rolls and assemble sandwiches.
Lemon & Dill Tartar Sauce

In a small bowl combine 1 cup mayonnaise, 3 tablespoons finely diced dill pickle, 1 tablespoon chopped capers, 2 tablespoons chopped fresh dill, 2 teaspoons fresh lemon juice, 1 teaspoon lemon zest, 1 teaspoon Dijon mustard, 1 teaspoon very finely minced garlic, 1 teaspoon salt, 1/2 teaspoon black pepper and 1/2 teaspoon honey (optional). Whisk until smooth and taste: adjust salt, lemon or dill as desired. Refrigerate for at least 10 minutes to allow flavors to meld (can be made up to 24 hours ahead).

Prepare tomato & greens
Lay tomato slices on a plate and season with 1/4 tsp salt and 1/4 tsp black pepper. Toss spring mix lightly with a very small pinch of salt (optional) if desired; keep it crisp and dry so it doesn't make the sandwich soggy.

Build sandwich
Spread about 2–3 tablespoons of the lemon-dill tartar sauce on the bottom half of each toasted ciabatta. Place the seared grouper fillet on top of the sauce. Add 1 cup spring mix per sandwich, then 3–4 tomato slices. Spoon another 1 tablespoon of tartar sauce on the top half of the roll (or serve extra on the side). Close the sandwich and press gently. Slice in half if desired.

Serve
Serve immediately while the fish is warm. Offer lemon wedges on the side for extra brightness and additional tartar sauce for dipping.
