    Prepare bread and cheese

    Lay out 4 slices of bread. If using Dijon mustard, spread about 1/2 tsp of mustard on the inside of two slices. Divide the cheddar and mozzarella (if using) evenly between the two sandwiches so each will have about 1/2 cup cheddar and 1/4 cup mozzarella. Sprinkle a light grind (about 1/8–1/4 tsp) of black pepper evenly over the cheese layers.

    Butter bread

    Evenly spread about 1 tablespoon of softened butter on the outside of each slice of bread (total 2 tablespoons). Make sure the butter covers to the edges to ensure an even golden crust.

    Cook sandwiches

    Heat a large nonstick or cast-iron skillet over medium-low to medium heat. If desired, lightly coat the pan with 1 teaspoon of nonstick butter or oil spray. Place one assembled sandwich in the skillet, buttered side down. Cook for 3–4 minutes without pressing, until the bottom is golden brown. Carefully flip the sandwich with a spatula, press gently, and cook another 2–3 minutes until the second side is golden and the cheese is fully melted. Reduce heat slightly if bread browns before cheese melts. Repeat with the second sandwich. For extra even melting, cover the pan with a lid for 30–60 seconds after flipping.

    Rest and slice

    Transfer sandwiches to a cutting board and let rest 1 minute to set. Slice each sandwich diagonally or in half and keep warm while finishing fries or fruit.

Fries (if chosen)

    If using frozen fries: preheat oven and cook according to package instructions (typically 425°F / 220°C for 18–22 minutes), tossing halfway, until golden and crisp. If using an air fryer: cook at 400°F (200°C) for 12–16 minutes, shaking once. Season with salt to taste immediately after cooking.

    If using fresh fries: preheat oven to 425°F (220°C). Toss cut potatoes with 1 tablespoon oil and 1/2 teaspoon salt (plus pepper or paprika if desired). Spread in a single layer on a baking sheet and roast 22–30 minutes, flipping once, until golden and crisp.

    For stovetop fries: heat 2–3 tablespoons oil in a heavy skillet over medium-high. Add potato sticks in a single layer and cook, turning occasionally, until browned and crisp, about 10–15 minutes. Drain on paper towels and season with salt.

Fruit (if chosen)

    Wash and prepare fresh fruit (slice apples, stem grapes, portion berries) and arrange 1 cup per serving on a plate. No cooking required.

Serving

    Plate one grilled cheese sandwich per serving with either a portion of fries (about 170 g / half the bag portion listed) or 1 cup fresh fruit. Serve immediately while hot. Offer ketchup or ketchup/mayo mix for fries if desired.
