Crawfish Boudin Filling

Crawfish Boudin Filling

    Prepare the mirepoix

    Heat a medium skillet over medium heat and add 2 tablespoons unsalted butter. When the butter is foamy, add the finely diced onion, celery and green bell pepper. Sauté, stirring occasionally, until softened and translucent, about 4–5 minutes. Add the minced garlic and cook 30 seconds until fragrant.

    Brown the boudin

    Add the crumbled andouille/pork boudin to the pan. Break it up with a wooden spoon and cook 3–4 minutes until heated through and some pieces are lightly browned.

    Build the etouffee flavor

    Stir in 1 tablespoon tomato paste and cook 1 minute. Add 1/2 cup crawfish or chicken stock, Worcestershire, hot sauce and Creole seasoning. Bring to a gentle simmer and reduce until slightly thickened, about 2–3 minutes.

    Combine crawfish and rice

    Add the chopped crawfish tails and cooked rice to the skillet. Fold gently to combine and heat through for 1–2 minutes. Taste and adjust seasoning with 1/2 tsp salt, 1/4 tsp black pepper and 1/2 tablespoon lemon juice if using. Stir in chopped parsley and sliced green onions. Remove from heat and spread the mixture in an even layer on a tray to cool completely — at least 30 minutes (cooling helps form croquettes).

Forming and Breading Croquettes

    Prepare breading stations

    Set up three shallow bowls: 1) 3/4 cup all-purpose flour; 2) whisk together 2 large eggs with 1/2 cup cold milk; 3) combine 1.5 cups panko breadcrumbs with 1/4 cup fine yellow cornmeal (optional), 1/4 tsp salt and 1/4 tsp black pepper. Have a rimmed baking sheet ready, lined with parchment.

    Shape croquettes

    With slightly damp hands, portion the cooled filling into 8 equal pieces (about 2.5–3 oz each). Shape each portion into a compact cylinder or ovoid (traditional croquette shape). If filling is sticky, wet hands or chill the filling 10–15 minutes to firm it.

    Bread croquettes

    Working with one croquette at a time, roll it in the flour to coat, shake off excess, dip into the egg mixture until fully coated, then press evenly into the panko mixture to fully cover. Place finished croquettes on the prepared sheet. For extra-crispy crust, repeat the egg and panko step for a double coat.

    Chill before frying

    Place the breaded croquettes in the refrigerator for 15–20 minutes to set the coating (this reduces falling apart during frying).

Frying

    Heat oil

    Pour about 2 cups vegetable oil into a heavy, deep skillet or sauté pan to create a 1–1.5 inch depth. Heat the oil over medium-high until it reaches 350°F (175°C). If you don’t have a thermometer, test with a small breadcrumb — it should sizzle and brown steadily.

    Fry croquettes

    Fry the croquettes in batches (do not overcrowd) for 2.5–3.5 minutes per side, turning gently so all sides become golden brown and crisp. Total fry time per croquette ~5–7 minutes depending on size and oil temperature. Adjust heat to maintain 325–350°F. Use a slotted spoon to transfer cooked croquettes to a wire rack or paper towel–lined plate to drain.

    Finish and hold

    Season croquettes lightly with a pinch of salt immediately after frying. Keep warm in a low oven (200°F / 95°C) on a rack while finishing remaining batches.

Tartar-Style Remoulade

    Make sauce

    Whisk together 1/2 cup mayonnaise, 1 teaspoon Creole or whole-grain mustard, 1 teaspoon sweet pickle relish, 1/2 tablespoon lemon juice, 1/4 teaspoon hot sauce, 1/4 teaspoon garlic powder, 1/4 teaspoon paprika and 1/4 teaspoon salt until smooth. Taste and adjust acidity or heat to preference. Chill until ready to serve.

    Serve

    Arrange 8 croquettes on a platter and serve hot with remoulade on the side or dolloped on each croquette. Garnish with additional chopped parsley and thinly sliced green onions if desired.
