Rim the glass
Run the lime wedge around the outer rim of a chilled coupe or rocks glass. Spread the coarse salt or tajín on a small plate and press the rim lightly into the seasoning to coat. Set the glass aside.
Cocktail Build

Combine ingredients
In a cocktail shaker, add the tequila (2 oz), triple sec (1 oz), fresh lime juice (1 oz), passion fruit puree (1 oz), and peach puree (0.5 oz).

Add ice and shake
Fill the shaker about two-thirds full with ice (approximately 1 cup). Secure the lid and shake vigorously for 12–15 seconds, until the shaker is cold to the touch and the mixture is well combined and slightly frothy from the purees.

Strain
Double-strain the shaken cocktail (using a Hawthorne strainer and a fine mesh strainer) into the prepared rimmed coupe or rocks glass. If you prefer serving over ice, add fresh ice to the glass before straining.

Top with bubbles
Carefully top the strained cocktail with Champagne or dry sparkling wine (about 1.5 oz). Pour slowly to preserve carbonation and create a gentle effervescence.

Float a thin lime wheel or a half passion fruit on the surface for aroma and visual appeal. Serve immediately.
