shuck and chill
If oysters are not already shucked, carefully shuck oysters keeping them on the half shell and transfer to a tray over crushed ice. Reserve any oyster liquor in a small bowl. Arrange lemon wedges alongside. Keep chilled until ready to use.

In a small saucepan over low heat, melt the unsalted butter gently—do not let it brown. Add the finely minced garlic and the minced shallot and cook very briefly (about 1 minute) just until fragrant. Remove from heat and stir in black truffle oil, grated Parmesan, parsley, chives, lemon zest, Cajun seasoning, salt, and black pepper. Taste and adjust salt or truffle oil as desired. Keep warm or transfer to a small warm bowl; if not using immediately, hold at room temperature but reheat gently before baking.

dress oysters for baking
Preheat oven to 425°F (220°C). Using a teaspoon, place about 1/2 to 3/4 teaspoon of the warm truffle garlic butter on top of each oyster, spreading it slightly over the meat and shell. If any reserved oyster liquor is available, add about 1/4 teaspoon to each oyster to enhance juiciness. Sprinkle a very light pinch (about 1/8 tsp) of smoked paprika over each for color.

Set oysters on a rimmed baking sheet or on a bed of coarse salt to stabilize shells. Bake in the preheated oven for 6–8 minutes, or until butter is bubbling and the edges of the oysters just begin to curl. Avoid overcooking — oysters should remain tender. Remove from oven.

While oysters rest or before frying, combine mayonnaise, Creole mustard, prepared horseradish, hot sauce, lemon juice, Worcestershire, paprika, Cajun seasoning, pickle relish, chopped green onion, salt, and pepper in a bowl. Whisk until smooth and adjust seasoning to taste. Refrigerate until ready to serve.
Frying (optional, for fried serving)

prepare dredge
In a shallow dish whisk together flour, cornstarch, salt, and pepper. Place beaten eggs in a second shallow dish. Pat oysters lightly dry with paper towel.

bread and fry oysters
Heat oil in a heavy skillet or Dutch oven to 350°F (175°C). Working in batches to avoid crowding, dredge each oyster first in the flour mixture (shake off excess), then dip in beaten egg, then back in the flour mixture for a light double coating. Fry 6–8 oysters at a time for about 1.5–2 minutes, turning once, until golden brown and crisp. Transfer to a wire rack or paper towels to drain and season immediately with a light pinch of salt.

Plate fried oysters with a dollop or ramekin of the Cajun remoulade and a sprinkle of smoked paprika and chopped parsley. Offer lemon wedges. Optionally spoon a small amount (about 1/4 tsp) of warm truffle garlic butter over each fried oyster just before serving for the black truffle flavor note.
Finishing & Garnish

For both baked and fried servings, finish with a light dusting of smoked paprika, a scattering of microgreens or chopped parsley, and offer lemon wedges. Serve immediately so oysters are hot and the butter is still aromatic.
