Method
Tempura-battered Shrimp

Prep shrimp
Pat the shrimp very dry with paper towels. Season lightly with 1/4 tsp kosher salt and the 1/4 tsp black pepper. If tails are on, leave them for presentation; if off, ensure they are fully dry.

Dredge
Place the 1/2 cup all-purpose flour and 1/4 cup cornstarch in a shallow bowl. Toss each shrimp in the mixture to lightly coat, shaking off excess. This helps the batter adhere.

Make tempura batter
In a medium bowl, whisk the large cold egg until blended. Add the 3/4 cup tempura mix (or additional 3/4 cup flour if using homemade) and 1/2 tsp baking powder and 1/2 tsp kosher salt. Pour in 3/4 cup ice-cold sparkling water and stir just until combined—batter should be slightly lumpy and cold. Do not overmix; keep the batter chilled in a bowl over an ice bath if your kitchen is warm.

Heat oil
Pour about 3–4 cups neutral oil into a heavy-bottomed pot or deep pan to reach ~2–3 inches depth. Heat to 350–360°F (175–182°C). If you don't have a thermometer, test with a small drop of batter; it should sizzle and float immediately.

Fry shrimp (flash-fry)
Working in small batches of 4–6 shrimp (do not overcrowd), dip each dredged shrimp into the tempura batter, allowing excess to drip off, then carefully lower into the hot oil. Fry 1.5–2 minutes until the batter is crisp and pale golden. Turn if needed. Use a slotted spoon to transfer shrimp to a wire rack set over a baking sheet (or paper towels) to drain. Keep fried shrimp warm in a 200°F (95°C) oven while frying remaining batches.

While frying, whisk together 1/2 cup Thai sweet chili sauce, 1 tbs sriracha (add more to increase heat), 1/4 cup mayonnaise, 1 tsp honey, and 1 tbs fresh lime juice in a bowl until smooth and glossy. Taste and adjust balance: more honey if too spicy, more lime if too sweet.

When all shrimp are fried and still hot, place them in a large mixing bowl. Pour the prepared sauce over the shrimp and gently toss to coat evenly. Work quickly so the sauce adheres but does not make the batter soggy; the hot shrimp will pick up the sauce without losing crispness immediately.
Mango-Cilantro Slaw

In a medium bowl combine 2 cups very thinly sliced green cabbage, 1 peeled mango cut into matchsticks, 1/2 sliced red bell pepper, 1/4 thinly sliced red onion, and 1/4 cup chopped cilantro.

Dress the slaw with 1 tbs lime juice, 1 tsp rice vinegar, 1 tsp olive oil, 1/2 tsp salt, and 1/4 tsp black pepper. Toss to combine and let sit 5–10 minutes to meld flavors. Taste and adjust salt or lime as needed.
Taco Assembly & Garnish

Warm 8 tortillas in a dry skillet over medium heat for about 15–20 seconds per side or wrap in a clean towel and microwave for 30–45 seconds until pliable.

To assemble each taco: place a small handful (about 1/4 cup) of mango-cilantro slaw on the warmed tortilla. Top with 2–3 pieces of sauced firecracker shrimp (depending on size).

Garnish with sliced scallions, a sprinkle of toasted sesame seeds, and extra cilantro leaves. Serve immediately with lime wedges on the side to squeeze over tacos.

Optional: serve extra firecracker sauce on the side for dipping.
