Chill glass

Place a martini/coupe glass in the freezer or fill with ice water while you prepare the cocktail to chill it thoroughly.

If using a sugar rim: wet the rim of the chilled glass with the lime wheel or a little lime juice, then dip the rim into fine sugar. Set the glass aside.

In a cocktail shaker, add Absolut Vanilla vodka (2 oz), passion fruit purée (1 oz), fresh lime juice (0.5 oz), pineapple juice (0.5 oz) and simple syrup (0.25 oz). If using egg white for a frothier texture, add 1/2 egg white now.

Dry shake (if using egg white)

If you added egg white, close the shaker and shake vigorously without ice for 10–15 seconds to emulsify and build foam.

Wet shake

Add ice (about 6 cubes) to the shaker. Close and shake hard for 12–18 seconds until the shaker is very cold to the touch and the exterior is frosty.

Discard ice/water from the chilled glass. Double-strain the mixture into the chilled martini/coupe glass using a Hawthorne strainer and a fine mesh strainer to remove ice shards and pulp for a smooth texture (unless you prefer pulp).

Garnish & Serve

Spoon or pour half a passion fruit's seeds (about 1/2 fruit) gently into the center of the drink so seeds float on top and release fresh aroma.

Finish with a lime wheel or twist on the rim or floated on the surface.

Serve immediately while cold. Optional: offer a small cocktail spoon so guests can scoop seeds as they drink.
