Method
Prepare Glass
Mix Cocktail
In a cocktail shaker (no need to add ice if using tin method) or mixing glass, combine tequila (or mezcal if substituting), fresh lime juice, and simple syrup (or agave).
Add a handful of ice to the shaker, then shake vigorously for 8–10 seconds to chill and lightly dilute the mixture.
Strain the chilled tequila-lime mixture into the prepared glass over the ice.
Taste and adjust sweetness: if the drink needs more balance, add up to 0.25 oz more simple syrup (or agave) and gently stir.
Garnish & Serve
Garnish with a grapefruit wedge or wheel and a lime wedge on the rim or floated on top.
Serve immediately with a straw or without, enjoying the contrast of bubbly grapefruit soda and bright, bitter-hop notes from the IPA.
