Make simple lime syrup
Combine 0.5 cups granulated sugar and 0.5 cups water in a small saucepan. Warm over medium heat, stirring, just until the sugar dissolves. Remove from heat and let cool to room temperature (about 10 minutes).

Prepare limonada
In a pitcher, combine 1 cup freshly squeezed lime juice and the cooled simple syrup. Add 2 cups cold water and stir to combine. Taste and adjust sweetness by adding more water or a tablespoon of syrup if desired. Refrigerate while preparing the rest (or proceed immediately).

If using fresh fruit
If you have whole pineapple or mango: juice or purée them and strain if you prefer a smooth drink. Measure out 1 cup pineapple juice and 1 cup mango juice/purée. If using pineapple chunks for texture, lightly muddle 0.5 cup chunks in the bottom of a measuring cup or bowl to release juices.

Combine tropical juices with limonada
Pour the 1 cup pineapple juice and 1 cup mango juice into the pitcher with the limonada. Stir gently to combine. Taste and adjust balance: more lime for tartness, more mango for sweetness, or a splash more pineapple for brightness.

Prepare ginger element (optional)
If using fresh ginger for extra bite, grate or finely mince 1 tablespoon fresh ginger and steep it in 2 tablespoons hot water for 5 minutes, then strain. Add the ginger infusion to the pitcher and stir. Skip this step if you prefer just the ginger beer spice.

Chill and assemble
Fill the pitcher (or serving glasses) with 3 cups ice. Pour the combined limonada + pineapple + mango mixture over the ice, leaving room at the top for the ginger beer.

Add ginger beer and finish
Slowly top the pitcher with 2 cups chilled ginger beer to preserve carbonation. Stir very gently once to incorporate. Taste and adjust: add a touch more simple syrup for sweetness or a squeeze of lime for brightness.

Serve
Pour into glasses over ice. Garnish each glass with a lime slice and a mint sprig, and optionally a chunk of pineapple on the rim. Serve immediately so the ginger beer stays fizzy.
