    Prepare dry ingredients

    In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and fine salt until evenly combined.

    Mix wet ingredients

    In a separate bowl or large measuring cup, beat the eggs lightly. Add the whole milk, buttermilk, melted butter, and vanilla extract and whisk until blended.

    Combine batter

    Make a well in the dry ingredients and pour in the wet mixture. Stir gently with a spatula until just combined; small lumps are fine. Do not overmix or the pancakes will be dense. Let the batter rest for 5 minutes while you heat the griddle or skillet.

Cooking Pancakes

    Heat a nonstick skillet or griddle over medium heat and lightly grease with butter or neutral oil. For each pancake, pour about 1/4 cup of batter onto the hot surface. Cook until bubbles form and the edges look set, about 2–3 minutes, then flip and cook until golden and cooked through, about 1–2 minutes more. Keep finished pancakes warm on a baking sheet in a 200°F (95°C) oven while you cook the rest.

    Make the three-milk mixture

    Whisk together the evaporated milk, sweetened condensed milk, whole milk (or heavy cream), and 1/2 teaspoon vanilla extract in a measuring cup or bowl until smooth and homogeneous.

    Soak the pancakes

    Arrange warm pancakes in a shallow baking dish or stack on a plate. Using a spoon, ladle, or small measuring cup, gently pour about 2–3 tablespoons of the tres leches mixture onto each pancake so it soaks in. If stacking, pour between layers so each pancake absorbs the milk. Allow pancakes to rest for 5–10 minutes so they soften and absorb the liquid. You can reserve a little of the milk mixture to serve alongside.

To Serve

    Top the soaked pancakes with a generous dollop of whipped cream, a drizzle of pure maple syrup (about 1–2 tablespoons per pancake or to taste), and fresh berries. Sprinkle toasted sliced almonds and a light dusting of powdered sugar if using. Serve immediately so the contrast between fluffy interior and milky-soaked exterior is preserved.
