Prepare Glass & Mix

    Chill glass

    Place a highball or pilsner glass in the freezer for 3–5 minutes, or fill with ice and water to chill while you prepare ingredients.

    Combine citrus and sweet

    In a small mixing glass or shaker, add 0.5 fl oz fresh lemon juice, 0.25 fl oz fresh lime juice, and 0.25 fl oz simple syrup. Stir or gently shake for 5–8 seconds to combine and slightly dilute.

    Add aromatics

    Add 2 dashes of non-alcoholic bitters substitute (or gentian concentrate) and 1 drop of orange blossom water to the citrus mixture. Stir once to incorporate. Taste and adjust one dash at a time if you prefer more bitterness or floral note.

Build Drink

    Discard ice/water from the chilled glass if used. Fill the chilled glass with 1 cup cubed ice (or enough to 3/4 full).

    Pour the citrus-aromatic mixture over the ice, distributing evenly.

    Carefully pour 4 fl oz chilled non-alcoholic lager (if using) into the glass first to create body, then top with 6 fl oz chilled sparkling water. Pour slowly down the side to preserve effervescence and create a gentle head. If you prefer a lighter profile, omit the non-alc lager and use 10 fl oz sparkling water total.

Finish & Garnish

    Give the drink one gentle stir (1–2 rotations) to integrate the layers without flattening the carbonation.

    Garnish with a lemon wheel on the rim and a fresh mint sprig slapped between your palms to release aroma, placed into the glass.

    Serve immediately while fizzy.
