Mojito Base

Prep glass and mint
Choose a sturdy Collins or highball glass. Place 10 fresh mint leaves and 1 lime wedge into the bottom of the glass.

Muddle
Gently muddle the mint leaves and lime wedge about 6–8 times with a muddler or the back of a spoon to release essential oils and lime juice. Do not over-muddle — avoid shredding the mint to prevent bitterness.

Add sweetener
Pour 0.75 oz simple syrup into the glass. If using granulated sugar instead, add 1 tsp and muddle a few more times until partially dissolved.

Add lime juice and rum
Add 0.75 oz fresh lime juice, then pour in 2 oz Bacardi Superior white rum.

Fill with ice
Fill the glass about three-quarters full with crushed ice (approximately 1 cup). This chills and helps combine the ingredients without over-diluting.

Top with soda and gentle stir
Top with about 2 oz club soda. Use a long spoon to gently lift and mix the drink 6–8 times from bottom to top to incorporate rum, lime, syrup and mint without bruising the leaves further.

Add a lime wheel to the rim of the glass and insert a fresh mint sprig on top. If desired, slap the mint sprig between your palms once and place it near the rim to activate its aroma. Optionally add 2 dashes of Angostura bitters on top for depth.

Serve immediately with a straw. Estimated yield: 1 classic mojito (servings below).
