    Prepare and dry shake

    Add gin, fresh lemon juice, simple syrup and the egg white to a cocktail shaker (no ice). Secure the lid and dry-shake vigorously for 15–20 seconds until the mixture becomes frothy and thick. This emulsifies the egg white for a stable foam.

    Wet shake

    Open the shaker, add the ice (4 large cubes), then seal and shake hard for 10–15 seconds until the shaker is cold to the touch and well-chilled. This chills and dilutes the drink while preserving the foam created during the dry shake.

    Strain and top with soda

    Double-strain the mixture into a chilled Collins glass filled with the serving ice (4 large cubes) using a Hawthorne strainer and a fine mesh strainer to remove ice shards and ensure a smooth texture. Immediately top with 2 oz chilled club soda poured gently down the side to preserve foam.

    Finish with bitters and garnish

    Carefully add 2 dashes of Angostura bitters on top of the foam; use a toothpick or small skewer to create a simple pattern if desired. Garnish with a lemon wheel or twist on the rim.
