Freeze mozzarella
Place the 12 mozzarella sticks on a parchment-lined baking sheet in a single layer. Put them in the freezer for at least 1 hour (ideally 90 minutes). Freezing prevents excessive cheese leakage during frying.

Put 1 cup all-purpose flour in a shallow bowl. In a separate shallow bowl, whisk together 3 eggs and 2 tablespoons milk until smooth.

Roll the egg-coated stick in the breadcrumb mixture, pressing gently so the crumbs adhere well. Place on a baking sheet. For a stronger seal and crunch, repeat the egg wash and breadcrumb step once more to create a double coat. After breading, return the coated sticks to the freezer for at least 30 minutes (preferably 60 minutes). This step is crucial to keep cheese from oozing out when fried.
