Ice & Finish
Method
Muddle & Mix
- 1
Build flavors
In a sturdy mixing glass or cocktail shaker, add the fresh raspberries, blackberries and the mint leaves. Pour in the simple syrup and fresh lemon juice.
- 2
Using a muddler (or the back of a wooden spoon), gently muddle the berries and mint until the berries are broken down and juices are released and the mint is fragrant. Avoid over-muddling the mint (which can turn bitter); press firmly 6–8 times.
- 3
Add the gin to the muddled fruit and herbs. Fill the shaker about halfway with ice (or add 4-6 ice cubes if using a mixing glass).
- 4
Shake vigorously for 10–12 seconds to chill and further integrate the berry flavors with the gin.
Finish & Serve
- 5
Prepare a rocks glass or short tumbler by filling it about three-quarters with crushed ice.
- 6
Double-strain the shaken mixture over the crushed ice using a cocktail strainer and a fine mesh sieve to catch berry seeds and mint bits.
- 7
Top the drink with about 2 oz club soda to give a light effervescence. Gently stir once or twice to combine.
- 8
Garnish with a lemon wheel or wedge and a small mint sprig. Optionally, thread a couple of whole raspberries or a blackberry onto a cocktail pick and rest on the glass rim.
- 9
Serve immediately with a short straw. Enjoy.
